Ingredient List
- 100g sultanas
- 4 tbsp fruit juice
- 100g white flour
- 75g brown flour (or use all white)
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- Large pinch of salt
- 3 ripe small bananas
- 150g natural yoghurt
- 1 tsp vanilla extract
- 100g light muscovado sugar
- 50g honey + 1 tbsp extra to glaze
- 2 large eggs
- 100g assorted nuts
Directions
Makes 1 loaf. Preheat the oven to 170°C. Grease a large loaf tin.
- Bring the sultanas and fruit juice to a boil in a small saucepan, then immediately remove from heat. Leave to soak while you prepare the rest.
- Whisk together the flours, baking powder, bicarb, and salt in a large bowl. Set aside.
- Mash the bananas in a bowl and mix in the yoghurt and vanilla. In a separate bowl, whisk the sugar, honey, and eggs with an electric whisk for about 5 minutes until lightened and thickened. Stir in the banana mixture.
- Fold in the dry ingredients, soaked sultanas, and three-quarters of the nuts, roughly chopped.
- Scrape into the prepared tin and scatter the remaining nuts over the top. Bake for about 60 minutes until a skewer comes out clean.
- Warm the extra honey and brush over the loaf while still warm. Cool in the tin.
- Wrap in greaseproof paper and store in an airtight container — keeps for about a week.
