Lemongrass + Coconut Soup

Lemongrass + Coconut Soup

Ingredients

  • 2 cans coconut milk + 1 can water
  • 2 zucchini
  • 2 packs soba noodles
  • 2 cups fresh mushrooms
  • 4 garlic cloves
  • 3 stalks lemongrass
  • 2 handfuls Thai or sweet basil
  • 2.5cm fresh ginger
  • 1 tbsp dry chilli paste
  • 1 tbsp chilli flakes

Directions

Toast the chilli paste in a pot over medium heat until fragrant. Blend the coconut milk, water, lemongrass, garlic, and ginger until smooth, then pour into the pot and bring to a boil. Reduce to a simmer.

Sauté the mushrooms in a splash of soy sauce and add to the soup. Season with salt to taste.

Spiralise or peel the zucchini into noodles. Cook the soba noodles al dente, then add everything to the hot soup. Serve topped with fresh basil.
