Pomegranate Jam

Ingredient List
- 3½ cups pomegranate juice
- 1 cup pomegranate seeds (from 1 large pomegranate)
- 3 cups sugar
- Juice of 1 lemon
Directions
Chill a small plate to test the jam's consistency later.
Combine the pomegranate juice and sugar in a large pot over medium heat. Stir until the sugar dissolves, then increase to medium-high and cook for 30 minutes.
Add the pomegranate seeds and lemon juice and cook for a further 10 minutes. Test the consistency by dropping a spoonful onto the chilled plate — tilt it, and if the jam holds its shape without running, it's done. If still runny, continue cooking and test every 5 minutes (about an hour total).
Fill sterilised jars and store in the fridge.
