Ingredients

  • 1 cup water
  • 1 cup white wine vinegar
  • 1/2 cup maple syrup
  • 1½ tsp pickling spice
  • 1/2 tsp kosher salt
  • 2 large Pink Lady apples
  • 2–3 star anise pods

Directions

  1. Combine the water, vinegar, maple syrup, pickling spice, and salt in a small saucepan. Bring to a boil, then reduce to low, cover, and simmer for 8–10 minutes. Taste a small spoonful once cooled — add more maple syrup a tablespoon at a time if you'd like a sweeter pickle.
  2. While the brine simmers, wash and core the apples — no need to peel. Cut each in half, then into smaller pieces. Add to a bowl with the star anise pods.
  3. Strain the brine directly into the bowl over the apple slices. Cover and cool to room temperature.
  4. Transfer to a glass jar, fill with brine, and discard any excess. Refrigerate — they'll keep for at least a week.
